Well summer is here, the time for an abundance of fresh goodness from the farmers market, home gardens, CSAS or wherever you get your produce.
I just got a huge bag of summer yellow squash from a friend and wanted to make something a little different.
So, while on a Facebook the other night I came across zucchini fries my friend Pam had posted. Thanks Pam!!! They looked so good. So I thought I would try mine with the summer squash since I have an abundance. She said her recipe was from weight watchers if anyone wants to check that out. I just kinda winged it and made it my own.
I posted these yesterday on Facebook and got many comments for the recipe so here it is.
Preheat oven to 475 degrees
Any kind of squash you prefer cut into strips aka fries
Whole wheat flour. I used whole white wheat.
2 to 3 egg whites
Panko breadcrumbs..you can get near the regular breadcrumbs.
Parmesan cheese
Salt,pepper, garlic powder to taste.
Mix about 1/4 c good Parmesan cheese in the Panko along with your seasonings.
Dredge the squash in the flour then in the egg whites then in the Panko. (I buy the plain Panko and put seasonings in that, if yours is seasoned then you are good to go.).
Place on a greased cookie sheet and bake at 475 for 25 -30 minutes or until golden brown.
Thats it. These were really crispy from the Panko.
