More water...


I really am trying to drink more water. I don't know why it's so hard for me. I'm not doing the crazy "drink my body weight" every day, but I can drink a lot more than I do.

So this post will be short and sweet.

I put this on my counter in hopes of me...and the family drinking it. It makes it more convenient if it slaps me in the face as I walk by saying...drink more water!!!

I added some cucumber slices which give it a spa like feel for me but you can have it straight up or with lemon too!

So here's where it is and hopefully I will succeed!!




I got this from SAMs club and it is huge! But they sell smaller ones as well!!

Veggies!

I have been throughly enjoying my CSA share of veggies! They have been very generous so I get a lot of good stuff. It does force me to eat more vegetables than maybe I normally would.

Since I am going to pick up this weeks veggies tonight I had to use some of what I didn't use from last week.

So, tonight it is chicken stir fry and sautéed book choy on the side. Yum!

Granola


I have been obsessed with granola lately. It is so delicious alone as a snack, like cereal, or in yogurt. Even the boys are liking it, which is a great thing.

Here is what I do:
In a bowl mix approximately (you can totally change this stuff to your liking)
2 C oats
1 C nuts..any will be great
Sunflower seeds
1 C unsweetened coconut

Add 1/3 C pure maple syrup or honey and 1/4 C olive, canola or coconut oil...or whatever kind you have. Heat honey and oil in microwave for 30 seconds first. Mix with the oats mixture.

Spread on greased cookie sheet. Bake at 350 for about 20 minutes. I like mine very brown but you can do less if you like it less brown. Cool completely on cookie sheet and then transfer to an airtight container.
Enjoy!











The white stuff is dollops of coconut oil on top.




Finished product. Crunchy..sweet...healthy...yummy!
